Vinification: harvested grapes are swiftly brought to the cellar. Soft pressing and cold static illipidation at temperature never more than 13°C. Natural yeast fermentation for fifteen days. Is sparkling in an autoclave, containing added yeast for foaming. Maturation of two months on original yeasts. Bottled by the spring and stands for thirty days before sale.

Wine tasting: Wine in straw yellow colour. The taste is pleasant, light, fresh and with acidity. Good match with fish or white meat. Excellent for aperitifs.

SERVING TEMPERATURE: 8 °C.
